Gluten-free Strawberry & Chocolate Pavlova

Nothing quite says British summertime more than a crisp Pavlova topped with fresh strawberries and some melted chocolate. Indulgent yet light, this scrumptious strawberry Pavlova is sure to be enjoyed by friends and family alike! With many of my friends being gluten-free, I love that this dessert is made with Udi’s Gluten Free All Purpose Flour, with is 100% suitable for coeliacs.

 200g Sugar

 4 egg whites

 1 tsp Vinegar

 1 tsp Udi’s All Purpose Flour

 200g British Strawberries

 50g milk chocolate


 Heat your oven to 170°C

 Whisk the egg whites until they form stiff peaks

 Add the sugar and continue to whisk until glossy

 Whisk the vinegar

 Pour the meringue on the baking sheet in to a rough circle

 Bake for 45 minutes – 1 hour depending our your oven

 Leave to cool

 Once cool pile high with strawberries and melted chocolate

 Add a handful of fresh mint for colour
