Gluten Free ‘Nana Cream’ Quinola Pudding

For Coeliac Awareness week we sampled some of the best Gluten Free recipes around, and this one is perfect on these warmer days for breakfast or as a yummy, fruity dessert. This super easy recipe can be found on the Quinola website, which is the brand of quinoa used here.

For the Gluten Free pudding:

  • 2 tbsp ready to cook Express Quinoa Pearl and Black (90 seconds in microwave)
  • 2 tbsp Chia Seeds
  • 1 tbsp Agave Syrup
  • 1 tbsp Shredded Coconuts
  • 1/2 cup Coconut Milk

Mix all in a mug and place overnight or 6-8 hours in the refrigerator. Transfer in a mason jar the next day.

For the Blueberry Nana Cream:

  • 1 1/2 frozen Bananas
  • 1 handful Blueberries
  • 1/2 cup Water

Blend in a high speed blender and transfer in mason jar, on top of pudding.

For the Carrot Nana Cream:

  • 1 small Carrot
  • 1 1/2 frozen Bananas
  • 2 Kumquats
  • 1 tsp Cinnamon
  • 1/4 cup Water

Blend all in a high speed blender. Transfer in mason jar, on top of blueberries nana cream.

Finish off with toppings of your choice: chocolate, pomegranate, kiwi… the choice is yours!
